In a study led by researchers from the University of Florida Institute of Food and Agricultural Sciences, they found that shiitake mushrooms improved certain markers of a person’s immune system, reducing their risk of getting sick. In addition, they think it could improve their longevity, due to how it helps protect the body from certain bacteria and other pathogens.

The research appears in the Journal of the American College of Nutrition.

“The aim of this study was to determine whether consumption of whole, dried Lentinula edodes (shiitake) mushrooms could improve human immune function,” write researchers in the journal’s online version. “Regular L. edodes [shiitake mushroom] consumption resulted in improved immunity, as seen by improved cell proliferation and activation and increased sIgA production. The changes observed in cytokine and serum CRP levels suggest that these improvements occurred under conditions that were less inflammatory than those that existed before consumption.”

For their research, scientists recruited 52 men and women between the ages of 21 to 41, who had to meet strict requirements prior to testing. They could not eat a vegan or vegetarian diet, drink tea, take antioxidant supplements or probiotics, for instance, which would affect their immunity. They also could not drink alcohol either, which could impair their immune system.

To start the trial, researchers instructed them to consume 5 to 10 grams of shiitake mushrooms daily, otherwise known as L. edodes. During the course of the study, they also took blood samples to measure certain markers associated with immunity.

4 weeks later, they had their answer: Shiitake mushrooms made their immune systems stronger. Through blood tests, they found it improved the functioning of gamma delta T-cells, which improved gut immunity. It also decreased certain inflammatory proteins, lowering body inflammation. Inflammation, if left untreated, can lead to chronic diseases such as cardiovascular disease and cancer.

These findings have led one researcher to recommend consuming it everyday.

“If you eat a shiitake mushroom every day, you could see changes in their immune system that are beneficial,” says Sue Percival, a University of Florida Food Science and Human Nutrition Professor. “We’re enhancing the immune system, but we’re also reducing the inflammation that the immune system produces.”

As for how much you need, it isn’t much, stress researchers. About 5 to 10 grams per day–that’s the equivalent of 1 to 2 handfuls–could keep your immune system healthy for years to come.
